Straight answers to the questions people ask most about cooking on cast iron and the tools we make for it.
A thin, flexible stainless steel spatula with an offset handle, shaped to match your pan. Most spatulas have a straight front edge, but most cast iron skillets are round, so a straight edge can't reach the food sitting against the curved wall. The Dryad Cookery Full Size Spatula is curved and angled to follow the inside wall of a round skillet. Its thin, flexible blade slides under eggs, fish, pancakes, and crispy potatoes without tearing them.
It depends on what you cook. Stiff, heavy turners are built for smashing burgers and hard scraping. A flexible blade is better for everyday skillet cooking, because it bends slightly to slip under delicate food and follows the shape of the pan. Our spatulas are made from full-hard 301 stainless steel, which flexes like a good fish spatula and springs back to shape.
Yes. A thin, flexible fish spatula is a favorite of many cast iron cooks. Most fish spatulas have a straight, slotted blade and a wood handle. The Dryad Cookery spatula gives you the same thin, flexible feel, with a blade curved to fit a round skillet and a G10 handle that can go in the dishwasher.
For a light press, yes. For hard smashing, use a stiff burger smasher or a heavy press. Our spatulas are built for finesse: getting cleanly under food and turning it without breaking it.
Both are safe on seasoned cast iron. Wood is gentle, but it has to be hand-washed and oiled, and it can crack, stain, or warp over time. A thin metal spatula gets under food more cleanly and scrapes away stuck bits. Ours combine a stainless blade with a G10 handle that can go in the dishwasher, so there's no wood to maintain.
The Dryad Cookery Full Size Spatula is designed to follow the curved wall of round cast iron skillets, so it works with standard round skillets from Lodge, Smithey, Field Company, and vintage makers like Griswold and Wagner. For small skillets (No. 3 to No. 6), the Mini Spatula fits better.
Yes. Every Dryad Cookery spatula comes in right-handed and left-handed versions. The blade's offset and curve are oriented to the hand you cook with, so it meets the pan wall correctly when you flip. Most spatulas are made only for right-handed cooks, and left-handed cooks feel the difference right away.
The Full Size Spatula handles everyday skillet cooking: pancakes, burgers, steak, eggs, and fish in 10- to 12-inch pans. The Mini Spatula is for small skillets, tight spots, delicate food, and packing for camping. Many people use both. The Spatula Set includes one of each.
If you cook on cast iron most days, yes. A $10 spatula usually has a straight edge that misses food at the pan wall, a plastic or wood handle that eventually melts, cracks, or loosens, and no guarantee. A Dryad Cookery spatula is shaped for a round skillet, comes in left- and right-handed versions, goes in the dishwasher, and has a lifetime guarantee against defects. It's the last spatula you'll need to buy for your skillet.
The blades are full-hard 301 stainless steel, thin and flexible, and they spring back to shape. The handles are G10, a high-pressure fiberglass and epoxy laminate. G10 is strong, doesn't absorb water, and won't crack or swell the way wood handles can.
A small spatula that fits a pack and a camp skillet. The Dryad Cookery Mini Spatula is compact enough to pack and precise enough for small pans over a fire or camp stove.
Yes. A metal spatula is a great tool for cast iron. Seasoning is oil that has been baked onto the iron until it bonds, and a smooth metal edge won't scrape it off in normal cooking. Flipping and scraping with metal also knocks down stuck-on bits and carbon buildup, which keeps the cooking surface smooth over time.
No. If seasoning flakes off when you use metal, it was usually built up too thick or never fully bonded. Well-bonded seasoning holds up to metal tools. Avoid sharp, burred, or serrated edges and chopping straight down into the pan. Those can gouge the surface.
We don't recommend it. Enameled cast iron (like a Dutch oven with a glossy coating) and nonstick coatings can scratch or chip. Use wood or silicone on those. Our spatulas are made for bare cast iron, carbon steel, and stainless steel.
Yes. They're shaped for round cast iron skillets, but they work on carbon steel pans, flat-top griddles, and stainless cookware too.
Yes. The stainless blade and G10 handle both hold up in the dishwasher. There's no wood to crack, swell, or need oiling.
Over time, washing and handling can leave the surface of a G10 handle looking dry, faded, or chalky. It's only cosmetic. The handle is just as strong. Rub in a few drops of food-safe mineral oil with a cloth and the color and sheen come right back. Re-oil whenever it starts to look dull again.
Yes. Chainmail is one of the best ways to clean cast iron. It removes stuck-on food without stripping well-bonded seasoning. Scrub with hot water, rinse, and dry the pan. Our 6x6 Chainmail Scrubber rinses clean and air-dries.
Yes. Modern dish soap won't remove bonded seasoning. A little soap and hot water is fine. Never soak cast iron or leave it in the sink, and don't put the pan itself in the dishwasher.
Clean it while it's still warm. Scrape out food with your spatula, scrub with hot water and a chainmail scrubber, then dry it completely, on a burner if you can. Wipe a very thin coat of oil over the cooking surface before you put it away. That routine prevents rust and builds seasoning every time you cook.
Tools they'll use every time they cook. The Dryad Cookery Cast Iron Starter Set covers everything: a Full Size Spatula shaped for their skillet, a Titanium Tong, a leather skillet handle cover, a Chainmail Scrubber, and cast iron oil. Pick right- or left-handed and one of three handle colors. For a smaller gift, the Spatula Set or a Chainmail Scrubber works well.
Titanium is strong, very light, and doesn't rust. Our Titanium Tong has no springs or hinges to wear out, the parts that usually fail first on kitchen tongs.
